Antica Acetaia San Giacomo

The Antica Acetaia San Giacomo produces
traditional balsamic vinegar
in Reggio Emilia.
In doing this century old rules must precisely be followed. In fact producing
this type of vinegar is a centuries old tradition. In sharp contrast to most
well known vinegar producers from Modena, no regular vinegar and sugar are to be
added as there is no need for cheap imitations. The creation of authentic
traditional balsamic vinegar has to be done in a process that requires aging in
wooden barrels for at least 12 years of time. The barrels leave the vinegar with
an ever richer and more delicate taste, during these long periods of natural
fermentation at Acetaia San Giacomo. For those that wish however to use a good
vinegar each day, the Acetaia San Giacomo offers a condiment, made according to
similar rules. The production is limited. Thus, such delicate specialties
shouldn't be heated during cooking in the kitchen, as they would loose much of
their tasty flavour. We advise classical recipes: salads, roasted beef and in
strawberry deserts. |
